Ingredients

  • 2 tablespoons olive oil or butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 1 parsnip, peeled and chopped
  • 1 sweet potato, peeled and cubed
  • 1 small turnip or rutabaga, peeled and cubed
  • 2 Yukon gold potatoes, cubed
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • 4 cups vegetable or chicken broth
  • 1 cup coconut milk or heavy cream
  • 1 tablespoon Dijon mustard (for depth of flavor)
  • 1 tablespoon flour or cornstarch (for thickening, optional)
  • Salt and black pepper to taste
  • ¼ cup chopped fresh parsley (for garnish)

Instructions

  1. Sauté the Aromatics:
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 3–4 minutes. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  2. Add the Root Vegetables & Spices:
Add the carrots, parsnip, sweet potato, turnip, and Yukon gold potatoes. Sprinkle with thyme, smoked paprika, and cumin. Stir everything together to coat the vegetables in the spices.
  3. Simmer the Stew:
Pour in the vegetable or chicken broth, making sure the vegetables are mostly submerged. Bring the stew to a gentle boil, then reduce the heat to low. Cover and let simmer for about 25–30 minutes, or until all the vegetables are fork-tender.
  4. Make It Creamy:
Stir in the coconut milk or heavy cream along with the Dijon mustard. If you prefer a thicker stew, mix the flour or cornstarch with 2 tablespoons of water to make a slurry, then stir it into the pot. Simmer for another 5 minutes until the stew thickens slightly.
  5. Taste & Adjust:
Season with salt and black pepper to taste. If desired, add more herbs or a splash of lemon juice for extra brightness.
  6. Serve & Garnish:
Ladle the stew into bowls and garnish with fresh chopped parsley. Serve hot with crusty bread or over rice for a heartier meal.

Serving Suggestions:

  • Pair with a slice of warm, buttery cornbread.
  • Serve with a fresh green salad for a balanced meal.
  • Add shredded rotisserie chicken or white beans for extra protein.

This Creamy Root Vegetable Stew is the ultimate comfort food—rich, flavorful, and perfect for a cozy meal at home! 🥕🥔🍲
